Salmon, Asparagus, Winter Squash and Bread

On the way home from work I stopped at our local farmers market looking for Tilapia, but there was no Tilapia. I bought a beautiful Organic Salmon.

Here is our dinner tonight: It is quick and easy to make. A healthy and delicious choice for your family. Plan on about 15 minutes for your cooking time. You can also cook the salmon on the grill. Kids will enjoy this recipe too.

I think it is one of my families top 10 dinners. The farmers market has an Organic Salmon. I like serving it with 2 or 3 vegetables.

Grilled Organic Salmon:

Wash, Pull out tin foil 5 times the size of the Salmon. Oil the top and sprinkle with herb of choice.

Saute onion and Fennel in olive oil and serve on top of the Salmon.

Cook on high heat grill 9 minutes until slightly pink on the inside.

Asparagus = wash, oil cookie sheet, rub asparagus on oil, cook in preheated 350 Degree oven for 9 minutes.

Squash – Steam butternut squash pieces for 9 minutes. Mash with potato masher and add 1/3 cup of low fat cream cheese and mix thoroughly.

Plate using different colors on either side of the plate. Bon Appetite!
